Egg Bake (serves 20)
Ingredients- 3 dozen eggs, 1 pound bacon, 1 pound sausage, 1 pound processed
cheese. Green onions, mushrooms or any other favorite ingredients may be
used in addition to those listed above.
Precook bacon and sausage and cut into bite size pieces. Cut processed cheese
into one-inch squares. Break eggs into a bowl or the Dutch oven. Beat eggs
with a whisk. The more air that you beat into the eggs the better the egg
bake will be. Put all of the ingredients into the Dutch oven and bake in
the fire for about 45 minutes. Cooking time may vary. Check eggs periodically.
Memphis Molly (serves 10)
we doubled the recipe for the Leader Extravaganza
Ingredients- One chocolate cake mix, one can chunk pineapple, one can cherry
pie filling, eggs, oil and water (check amounts on cake mix)
Put the pie filling and pineapple in the bottom of the Dutch oven. Mix the
cake according to directions on the box. Add the cake batter to the Dutch
oven. If doubling the recipe add the next layer of fruit and then the second
cake mix. Bake in the fire about 45 minutes or until the cake is done. Cooking
time may vary. Check the cake periodically.
Dutch Oven Pizza (serves 3-4)
Ingredients- Biscuit mix or pita bread, pizza sauce, grated cheese, other
pizza toppings as desired.
Mix one batch of biscuit mix (omit this step if using pita bread). Place
dough or pita bread in an 8-9 inch pan. Cover with pizza sauce, toppings
and cheese. Place the pan on top of rocks in a Dutch oven. Bake in the fire
about 15 minutes.
Cinnamon Rolls (serves 6-8)
Ingredients- Biscuit mix, cinnamon sugar
Mix on batch of biscuit mix. Roll out on a flat surface and cover with cinnamon
sugar. Roll up the dough into a log and cut off 8-10 slices. Bake in a box
oven 20-30 minutes. The cooking method used for the pizza would also work.
Leader Ideas
Omelet in a Bag
Place 2 eggs and other omelet items in a ziploc freezer bag. Cook in boiling
water until done. Use one bag for each girl.
Foil Pizza
Place pizza sauce toppings and cheese on a piece of bread. Cover with a second
piece of bread, wrap in foil and bake in the coals.
Tortilla Dessert
Spread a flour tortilla with peanut butter. Add chocolate chips and mini
marshmallows. Roll up and place in foil. Bake in the coals.
Bags of Gold (cheese dumplings in tomato soup)
Prepare tomato soup according to directions on the can and bring almost to
a boil. While the soup is heating prepare biscuit mix and cube cheddar
cheese. Place one piece of cheese in the center of some biscuit dough and
cook in the tomato soup.
Banana Boats
Several variations of this were discussed. The basic idea is to slice a banana
in half and place chocolate, marshmallows and coconut in the center, put
the banana back together and wrap it in foil and place on coals.
Muffins in an orange
Scoop out and eat the inside of an orange and then use the peel (left in
a cup shape) to cook a muffin.
It was suggested that people check out the book "Cooking on a Stick". It is available at some libraries and contains many good ideas.
